Spiced Pumpkin Pie
Prepare to be bewitched by the slice of this enchanting spiced pumpkin pie. It’s so scrumptious; it’s almost eerie. Let’s dive broomstick-first into this spellbinding dessert!
Method
Follow this potion’s instructions, and you’ll have the neighbourhood witches cackling with delight.
Directions
Step 1
Preheat your oven to 180°C. Steam the pumpkin chunks for 15 minutes until they’re softer than a ghoul’s heart. Let them cool.
Step 2
Unroll the pastry, laying it in a tart tin (about 22cm). Trim any excess and line with baking paper and baking beans. Bake for 15 minutes, remove beans and paper, then cook for another 10 minutes until golden.
Step 3
Once your pumpkin is cooled, blend it in a processor until smooth as a phantom’s dance. In a separate bowl, mix the eggs, yolk and sugar. Then, add the pumpkin puree, cream, and those bewitching spices: cinnamon, nutmeg, and ginger. Mix until you have a concoction worthy of any coven.
Step 4
Pour this enchanting mixture into your tart shell. Slide it into the oven and bake for 35-40 minutes. You’ll know it’s ready when the filling sets but still has a slight jiggle (a bit like a ghost’s belly laugh!).
Step 5
Let your pie cool and then chill in the fridge for a couple of hours. It’s worth the wait, we promise! Once chilled, slice and serve to your fellow witches and wizards.
Note's
- Ensure your pumpkin is well-steamed and soft; this makes for a smoother pie texture.
- If your edges are browning too quickly, use some foil as a shield. Just like a protective spell against overbaking!
- You can add a dollop of whipped cream on top for an extra cloud of delight. Or maybe even a sprinkle of cinnamon for that added magical touch.

- 500g pumpkin, peeled, deseeded and diced
- 2 large eggs, plus 1 yolk (save the white for a phantom meringue, perhaps?)
